Peanut Butter Cream Cheese

A few days ago, I was shopping at Trader Joe’s with my Mom and had quite a decision to make. You see, when we go food shopping my Mom has to give me a limit as to how much I can spend at places like Trader Joe’s, Whole Foods, and Shop Rite because she knows I could easily buy the entire store. So when we were at Trader Joe’s I knew I was nearing my monetary limit and had to choose between their Mini Tacos or their Peanut Butter Cream Cheese. It was a tough decision, but ultimately I chose the Mini Tacos. I could make the Peanut Butter Cream Cheese myself, after all!
Right when I got home, that was exactly what I did. I also made some bagels to spread the cream cheese on, but apparently yeast has an expiration date. My yeast expired in 2010 so my bagels didn’t rise at all. They tasted okay, but there is a lot of room for improvement.
The Peanut Butter Cream Cheese was the only thing that saved the bagels from being an utter failure. The best part is that it only requires 4 ingredients and it takes about 5 minutes to make!
Peanut Butter Cream Cheese
Inspired by Trader Joe’s Peanut Butter Cream Cheese
Ingredients:
- 1 (8 ounce) package light cream cheese
- 1/3 cup peanut butter
- 3-4 tablespoons honey, depending on your taste
- 1/4 cup chopped peanuts
Directions:
- Place all ingredients except peanuts in a small microwave-safe bowl. Microwave on high for 20 seconds or until cream cheese is soft and easy to stir. Stir well.
- Add peanuts and stir cream cheese mixture again until well combined. Serve or cover and refrigerate for up to 1 month.

This cream cheese is very mousse-like and fluffy. All you have to do to achieve the same consistency is mix the cream cheese mixture really well with a fork and that’s it. No mixer required!
In addition to bagels you can also spread this on toast and crackers, or even use it as a dip for fruits like apples or bananas! Use it in place of peanut butter in a PB & J or add some melted chocolate chips for a more dessert-like spread. The possibilities are endless!
Take that Trader Joe’s!

This looks AMAZING!!! I might try this with vegan cream cheese…YAY!!
