This week I was pretty much drowning in homework. I mean, I always have a ton of homework, but this week was just crazy. Probably because midterms are in a week. I hate midterms. Anyways, this week I didn’t have much time to come up with delicious new recipes, so I took the easy way out and showed some love to my fellow food bloggers. Check it out.
Sunday afternoon I got bored so I decided to bake some of Mama Pea’s Pretzel Subs. Lately, I’ve been obsessed with soft pretzels so these subs were a perfect fit for me. Pictured above was Monday’s lunch…talk about a great way to start the week! I can see these becoming a weekly occurrence.
Tuesday nights are usually my nights to make dinner. This week I made something I’ve had my eye on for a while: Janetha’s Four Can Quinoa Casserole. A few weeks ago I picked up some quinoa Whole Foods and could barely wait to use it. This dish was everything you could hope for in a recipe: it was easy, delicious, and healthy! Perfect for a first-time quinoa eater like myself!
Wednesday was my Dad’s birthday. We celebrated this past weekend so he already blew out the candles on his birthday cake, but we still felt like he needed a little something on his actual birthday. Luckily, last week Jessica posted a recipe for her One Bowl Vanilla Cupcakes for Two, so it worked out perfectly. One cupcake for my Dad and one cupcake split three ways between my Mom, Phil, and I. I could have easily demolished both of them by myself. Just saying.
On Thursday I took the plunge and finally made Evan’s Snickerdoodle Dessert Hummus! I halved the recipe because, honestly, I was scared at first to mix chickpeas and brown sugar. It just didn’t seem right! That being said, I was totally wrong. I wish I doubled the recipe because it was so good! The only substitutions I made were vanilla almond butter in place of regular almond butter and agave in place of maple syrup. Yum!
Today I really wanted to bake a savory *cough* bacon *cough* biscuit, but realized it would be pointless considering it’s Friday and I can’t have meat. I guess it will have to wait until tomorrow. Ugh.
Speaking of which, I have three savory recipes to share with you next week! Two of which involve bacon. Get excited!

I totally forgot about those soft pretzel rolls! Thanks for reminding me of them, they sound soooo good. I really want to try the dessert hummus too. I never questioned it because I love putting black beans in chocolate smoothies. It’s really good!
This week I made granola and blondies! The blondies turned out phenom (how could they not? they were based on a martha recipe and martha has never failed me) and the granola was burnt, but I still really like it and I can’t wait to give it another go!
I have seen dessert hummus on a few blogs and I think I need to give it a try! It looks delicious! Happy belated birthday to your dad…the cupcakes look scrumptious!

I only seem to like certain flavors of hummus, so I’m really intrigued by the dessert hummus. I will have to try the recipe!

Oooh, dessert hummus! I am obsessed with hummus but I am too scared to try sweet hummus. You’re completely right about mixing chickpeas and brown sugar- too weird

Recently, aka Friday, I spent my whole day in the kitchen. I am NOT kidding. ALL day. I baked Cookies, Cookies, 2-layered Cake, Cupcakes, and a Pizza Cake (which all had to be frosted and decorated); PLUS, I made chocolate covered pretzels. They were all for an fundraiser auction. SO much fun!

I’d be scared to mix chickpeas and sugar together as well–those two foods don’t go together in my head! But you’ve encouraged me to try this recipe
have you tried baking chickpeas with cinnamon, vanilla, honey, and sugar? It’s pretty good and makes a nice crispy snack. I didn’t follow an exact recipe when I made it but here’s something similar: http://www.bakeyourday.net/roasted-chickpeas/
