Peanut Butter Chocolate Banana Cookies

Peanut Butter. Chocolate. Banana. Bacon. Elvis was definitely onto something when he discovered this awesome combination. Originally I was planning on making a full-fledged Elvis cookie complete with crumbled bacon. Unfortunately, I was all out of bacon and was in no mood to run to the store. That’s right. I needed those cookies and I needed them fast. Another chocolate craving, perhaps?
No. I don’t think it was just a chocolate craving. It was worse. It was a chocolate and peanut butter craving. The most dangerous of the cravings. Obviously I couldn’t deny it, so I just went with it. Sans bacon. It was fabulous!
Peanut Butter Chocolate Banana Cookies
“Peanut butter, chocolate, and bananas come together in this moist and chewy cookie. Each bite is like a piece of peanut butter heaven.”
Ingredients:
- ¾ cup peanut butter
- ¾ cup granulated sugar
- 1 large egg
- ½ cup chopped banana chips
- ½ cup chocolate chips
- ¼ cup chopped peanuts
Directions:
- Preheat oven to 350ºF and grease a large baking sheet. Set aside.
- Place peanut butter, sugar, and egg in a medium mixing bowl. Mix until well-combined.
- Stir in banana chips, chocolate, chips, and peanuts until mixed throughout the cookie dough. Form dough into small round balls and place about an inch apart from each other on the prepared baking sheet. Bake for 12 minutes or until golden brown. Let cool and enjoy!
Yield: 1 dozen cookies
Mmmm…Mmmm…Mmmm! Never one to toot my own horn (clearly) I must admit that these cookies were pretty stellar! But, don’t just take it from me, even my mom likes them and she doesn’t even like peanut butter. She is never one to lie about my food either. She tells it like it is, which is a good thing…most of the time. Most importantly, however, is the fact that I ate one of these before my last Track meet and PR’ed in the 1600! In other words, these cookies are amazing! I highly recommend you make them!

If you swap out the peanut butter for almond butter then I’m definitely on board (allergies!). There’s no combination I love more than AB, banana, and chocolate.

Sooo need to make these!! I make flourless pb cookies often, but I have never thought to add anything else to them but chocolate chips! My husband would totally love these!!
