Triple Cheese Stuffed Pizza Rolls

Okay. I know what you are thinking…
“How on Earth does she come up with things like this?!”
I know that’s what I think sometimes. Honestly, I don’t even know how I get most of my recipe ideas. In my sleep, perhaps?
This particular recipe idea came to me in the middle of class. Spanish class, to be exact. Like I said before I like the class, I really do, but sometimes dreaming up new recipes is a heck of a lot more interesting that learning how to conjugate reflexive verbs. You hear what I’m sayin’?
Now, before you start getting all concerned and tell me that I really should pay attention in class, I should let you know that I am passing the class with an 87%.
Sure, I do pretty terribly on tests and quizzes, but at least I do all my homework. And classwork. And projects. And partner activities. And every chapter of that evil, torturous computer program known as Rosetta Stone.
I guess it’s just not enough. That’s why I should be working on my 329 test re-do packets. But I’m not.
Instead I’m making this.
Ooey. Gooey. Cheesy deliciousness.
A mixture of ricotta, mozzarella, and Parmesan cheeses that is so good you could eat it by the spoonful. Not that I’d ever do anything like that. Oh no! Never in a million years.
Triple Cheese Stuffed Pizza Rolls
“Warm, carbalicious, pizza rolls stuffed with a mixture of ricotta, mozzarella, and Parmesan cheeses.”
Ingredients:
- 1 pound prepared pizza dough
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese
- 3 cloves garlic, minced
- ½ – 1 teaspoon dried oregano
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 1 cup marinara sauce
Directions:
- Preheat oven to 400 degrees Fahrenheit. Spray a 9-inch glass pie plate with nonstick spray, set aside.
- Place cheeses, garlic, oregano, pepper, and olive oil in a medium bowl. Stir until just combined.
- Roll out prepared pizza dough on a floured surface until approximately ¼-inch thick and in the shape of a large rectangle. Spread evenly with cheese mixture and roll lengthwise. The rolled dough should resemble an uncut cinnamon roll log. Pinch the ends of the roll and cut into 8 equal sections. Place on the prepared pie plate, cheese side up.
- Bake for 30-35 minutes, or until the edges turn golden brown and the cheese begins to bubble. Top with marinara sauce and serve!
Yield: 4 servings

In short, they are really good and totally worth the 75% on my last test. Totally. Worth. It.

Hey, Erika! Sooooo tempted to try these. Question: Can you use part skim mozzerella and parmesan for this recipe? I would love to make these for my family, but my Dad is restricted to heart-healthy foods which, sad to say, do not include whole milk cheese. Boo.

Yes part skim mozzarella and Parmesan can be used. I’ve also used part skim ricotta a few times and its turned out fine. Enjoy!
