Homemade Quinoa Bread With Honey Butter

Well, it’s that time of the year again! The end of the school year. :-D

For the past 10 years, the end of the school year has been a happy time filled with fun activities and barely any schoolwork. It was so nice to be able to relax those last few weeks of school. Unfortunately, I took that for granted.

Who knew that once you enter high school everything changed? Now the last few weeks of the school year are jam-packed with studying, last-minute tests, and Final Exams. It’s crazy!

While I have been suffering from a bit of Writer’s Block lately due to all of that extra brain activity, I am happy to announce that my recipe-creating abilities haven’t been bothered one bit!

Today’s creation is simple, yet different sandwich bread. A few months ago, I came across a recipe for Multigrain Bread using brown rice, crushed cereal, and cooked barley in my New Basics Cookbook. The bread looked so good that I decided I had to give it a try. Sure enough, a week or so ago, I ended up whipping out the cookbook and gathering the ingredients. I made a few adaptions based on the ingredients I had on hand and it still came out beautifully!  I added in cooked quinoa before baking and whipped up some Honey Butter at the last minute to compliment the quinoa’s nutty flavor. Let me tell you, this bread is a winner! :-D

Homemade Quinoa Bread With Honey Butter

“This bread is hearty, flavorful, and good for you! Use it as bread for sandwiches or have it as a snack spread it Honey Butter! Either way you enjoy it, you’ll be sure to come back for another slice!”

Ingredients:

For Bread:

    • 1 package (or 2 ½  teaspoons) active dry yeast
    • ½ cup warm water
    • ½ teaspoon granulated sugar
    • 1 ½ cups all-purpose flour
    • 1 ½ cups whole wheat flour
    • ½ teaspoon salt
    • 2 tablespoons ground flax seed (optional)
    • 1/3 cup water
    • 3 tablespoons canola oil
    • 2 tablespoons honey
    • 2/3 cup cooked quinoa (1/3 cup dry quinoa boiled for 10 minutes in 1 cup water

For Honey Butter:

  • 1 stick unsalted butter, softened
  • 2-4 tablespoons honey
  • pinch of salt

Directions:

For Bread:

  1. Stir the yeast, warm water, and sugar together in a small bowl. Let the mixture stand until the yeast starts foaming, about 10 minutes.
  2. In another bowl, combine the flours, salt, and flax. Stir well, and then add the yeast mixture, 1/3 cup water, oil, and honey. Stir until the mixture forms a mass.
  3. Turn the dough out onto a lightly floured surface and knead it until smooth, about 5 minutes.
  4. Lightly oil a large bowl, and turn the dough in it to coat. Cover the bowl loosely with a kitchen towel, put it in a warm place, and let rise for 1 hour.
  5. Punch the dough down and transfer to a lightly floured work surface. Knead it once or twice and then flatten it out. Sprinkle the dough with the cooked quinoa, and knead again until the mixture is smooth and the quinoa is well blended in. If sticky, sprinkle the surface with flour as you work.
  6. Shape the dough into a loaf and place it in the prepared pan. Let it rise, loosely covered, until doubled in bulk, about 1 hour.
  7. Preheat the oven to 400 degrees Fahrenheit.
  8. Grease a 9 x 5 x 3-inch bread pan. Bake the bread for 30-35 minutes. Cool on a wire rack. Serve.

For Honey Butter:

  1. Place all ingredients in a small bowl. Stir until well-combined.

Yield: 1 loaf (8-10 slices) of bread and ½ cup butter
