Bacon Cheddar Beer Bread

Uh-oh. I just did something bad.

Something really, really bad.

It started with a loaf of beer bread. Sounds innocent enough, right?

Wrong!

This wasn’t just any boring beer bread. It was beer bread stuffed with bacon, cheddar cheese, garlic, and sautéed onions.

Beer bread baked to perfection and then slathered with butter.

It’s highly addictive and very, very yummy.

You’ll feel compelled to cut slice after slice, butter, eat, and repeat.

And guess what? I can’t blame you.

It’s just that tasty.

So…I guess I did a good thing. A very, very good thing.

Bacon Cheddar Beer Bread

Adapted from Cooking Light

Ingredients:

  • 3 slices bacon, chopped
  • 1 clove garlic, minced
  • 1 small yellow onion, diced
  • 3 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 (12 ounce) can or bottle of beer
  • 2 tablespoons butter, melted

Directions:

  1. Preheat oven to 375° Fahrenheit.
  2. In a large pan, cook bacon on medium-high until crisp, approximately 5 minutes. Remove bacon from pan and add onion to the same pan with bacon grease; cook 10 minutes or until browned, stirring occasionally. Add garlic, cook 1 more minute.
  3. Combine flour, sugar, baking powder, and salt in a large bowl, stirring with a whisk; make a well in center of mixture. Add bacon, onions, garlic, ¾ cup of cheese, and beer to flour mixture, stirring just until moist.
  4. Spoon batter into a 9 x 5–inch loaf pan coated with cooking spray. Drizzle 1 tablespoon butter over batter and top with remaining ¼ cup cheese. Bake at 375° for 35 minutes. Drizzle remaining 1 tablespoon butter over batter. Bake an additional 25 minutes or until deep golden brown and a wooden pick inserted into the center comes out clean. Cool in pan 5 minutes on a wire rack; remove from pan. Cool completely on wire rack.

Yield:  1 loaf
