Strawberry Basil Jam

I was supposed to share a waffle recipe with you today BUT this morning I went to upload the photos and none uploaded. Then I pressed review on my camera and all of my waffle pictures were gone. Just.like.that.
So, instead of waffles, I’m sharing this jam with you. Well, not literally because it’s all gone now. I made it before I left for vacation and ate it all in, like, four days. It’s goooood!
Strawberries and basil are one of those flavor combinations I discovered after I started blogging. The sweetness of the strawberries and the savory “bite” of the basil work fabulously together.
I whipped this jam together in such a short amount of time that I nicknamed it “lazy girl’s jam.” From start to finish it takes a total of 20 minutes. And you only have to clean a couple of measuring cups and a pot. [Score!]
The time that you saved making the jam you can use to utilize the jam. Personally, I wouldn’t recommend using this jam on plain bread like I did in the pictures. [Oops!] I would recommend making a grilled cheddar or swiss cheese sandwich and spreading it with this jam. And, if you’re feeling daring, add bacon. You’ll be glad you did.
Strawberry Basil Jam
Ingredients:
- 3 cups strawberries (I used frozen, but fresh would also work.)
- ¼ cup brown sugar
- ¼ cup water
- 4 basil leaves
- 1/8 teaspoon black pepper
Directions:
- Place a large pot on the stove and heat to medium-high heat; add all ingredients and bring to a boil.
- Once contents come to a boil, reduce heat and simmer for 15 minutes. Remove from heat and allow to cool. Remove basil leaves from cooled jam and mash strawberry mixture with a potato masher. Store in an air-tight container in the fridge for up to 2 weeks.
Yield: 1 ½ cups jam

I uploaded pictures for another recipe today and it uploaded fine so it’s not the memory card. Must’ve just been a freak thing…
Sad about the photos! But this recipe more than makes up for the waffle loss! YUM!
Next step is learning how to can/jar so you can keep it around all the time

We’ve had a lovely dessert with similar flavours once, it was made of strawberries marinaded in balsamic vinegar (with another sweeter liquid but I can’t remember what!) and topped with basil. I’d love to try this jam!
