Soft Pretzel Bites

I almost  gave up pretzels for Lent.  But then I decided not to.  I know, crazy idea, right?  For me, going without pretzels for 40 days and 40 nights would be nearly impossible.  I’m kind-of obsessed with pretzels.

When I was training for my half marathon I would eat a banana with peanut butter and a handful of pretzel nuggets before each of my long runs.  When I come home from school at 3PM and I’m absolutely starving because my lunch is scheduled for 10AM, I eat pretzel sticks dipped in peanut butter.  When I’m in the lunch line at school and I spot the lunch ladies unloading a box of fresh, steaming hot soft pretzels, I buy one.  When my sweet tooth is raging, I eat pretzel-crusted trufflesYou get the picture. ;-)

So, since pretzels make up about 25% of my diet, I decided to give up something else for Lent.  I chose Biscoff Spread.  You know, that delicious Belgian cookie spread that everyone in Blog World seems to be obsessed with?  Yeah, that’s the stuff that I will be going without for 3 more weeks.  Waaaaaah! :-(

But enough about that.  This post isn’t about Biscoff - this post is about pretzels.  Not just any pretzels, though, fluffy, warm, soft pretzel bites!

A little over a year ago, I discovered this recipe for soft pretzel bites from Kirbie’s Cravings and it’s been my go-to pretzel recipe ever since!  They’re the best!  And that’s not just my opinion, I’ve made them for various parties and they’ve been a hit at each and every one, too! 

I’m sure you’re wondering why, if these pretzels really are the best, I haven’t shared them with you before.

Funny story about that actually.

I’ve made these pretzels three times before today and, each and every time I, I mean, my family and I have demolished them before I was even able to think about pictures.  They’re just that good.

I managed to take picture this time though!

Crispy Fried Goat Cheese

Food blogging has introduced me to so many new ingredients that it’s crazy to think that, this time last year, I didn’t even know about half of the foods that are now my staples! Goat cheese is one of those foods that food blogging has introduced me to. It’s definitely an acquired taste, but I love it.

Last week, after making the Bacon, Date, and Goat Cheese Galette, I was left with half a roll of goat cheese just waiting to be used. Now if there’s one thing I need to work on (other than procrastination) it would be wasting food. I don’t do it intentionally, of course, but far too many times I’ve put something half used into the fridge, forgot about it, and then discovered it a week or two later after it has spoiled. :-(

I definitely didn’t want that to happen. Especially not with goat cheese. Goat cheese is too good to waste so I decided to take action. Immediately I got on Google and started searching for some goat cheese recipes. I stumbled across this recipe for Crispy Fried Goat Cheese and right away I knew I was in love.

Crispy, crunchy breading filled with ooey gooey melted goat cheese? These are like a more sophisticated (and more delicious) version of mozzarella sticks.

And yes, they’re just as delicious as they look!

Ferrero Rocher Cookie Dough Dip

Procrastination is a bad habit of mine. 

I’m probably one of the biggest procrastinators you’ll ever meet. 

Luckily for the blog, one of my favorite ways to procrastinate is to stalk the recipe archives of some of my favorite food bloggers.  You know, because sometimes stalking Foodgawker and Pinterest just isn’t enough. ;-)

This week I’m supposed to be working on a research paper about the thirteen colonies for my U.S. History class, but somewhere along the way I stopped making outlines and thinking up thesis statements and started scouring the recipe archives on Jessica’s blog instead. 

C’mon you know looking up recipes is 100 times more interesting than History anyways…

After an hour a few minutes of looking up recipes I began to feel hungry. I sure had worked up an appetite after all that procrastinating essay writing. :-P

As I’m sure you guessed looking at the title, I decided to make Jessica’s Chocolate Chip Cookie Dough Dip.  If there’s one thing that’s better than the taste of chocolate chip cookies hot out of the oven,  it’s the taste of raw cookie dough.  And the idea of having that in dip-form was simply to much to bear.

I shoved my school papers aside and immediately started gathering ingredients, measuring, mixing, and making a mess of the kitchen.  It took me until halfway through the preparation stage to realize that I didn’t have any chocolate chips on hand. 

My stomach dropped.  My eyes began to tear.  [Okay, totally kidding about that part!]  I couldn’t believe I was out of chocolate chips.  My cookie dough dip needed chocolate chips! 

Just when I was about to give up and settle with chocolate chip-less cookie dough I remembered my early Valentine’s present.  Cookie dough dip with the chocolate hazelnut goodness of Ferrero Rochers?  I think yes! :-D

The day was saved and the cookie dough dip was amazing!  Plus the mild sugar high that ensued after having 92364 spoonfuls of the dip gave me just the energy I needed to get some of my paper done.  But just some. ;-)
