Raspberry Brie Galette

You know you have a brie addiction when you go out and buy a 2-lb. wheel of brie and there is only one other person in your family eats it…

…that’s right.  I’m looking at you Mom!

That’s right.  I fooled you.  I’m not the brie addict – my Mom is.  I’m just an enabler.  And, okay, I’ll admit it, I am quite the brie enthusiast too.  Not addict, enthusiast.

Alright, maybe we are addicts, but can you really blame us?

Brie is just so yummy, and gooey, and savory, and flavorful, and creamy, and flat-out amazing.  It’s irresistible!

I could eat crackers with brie and fig jam everyday and never get tired of it.

Actually, I lied. 

Correction: I could eat this galette and crackers with brie and fig jam everyday and never get tired of it!

After downing a quarter of the wheel o’ brie in a matter of days, I knew it was time to get serious.  I started gathering ingredients for Natalie’s Blueberry Brie Galette and, in the heat of the moment, forgot that I didn’t have any blueberries or lavender on hand.

Of course, by the time I realized that, I had already grated 6 tablespoons of frozen butter so there was no turning back! 

Instead of fresh blueberries I used a bag of frozen raspberries.  Instead of lavender I used dried thyme and freshly-ground black pepper, for a nice savory kick.  Before I even put the galette in the oven I could tell it was going to be good!

I was right.

It was absolutely fabulous!  The crust was perfectly crisp, the brie was melty, and the raspberries added the perfect contrast of sweetness to the savory brie.

And it’s a good thing I took pictures before I put the galette into the oven because my Mom and I devoured it almost immediately!
